Ingredients for Mashed Potato Soup:
2 tablespoons butter
3 large shallots, minced
3 garlic cloves, minced
2 pounds potatoes, diced (905 grams)
salt to taste
pepper to taste
6 cups vegetable broth (1.5 liters)
2 cups water (480 ml)
2 sprigs fresh thyme
1 bay leaf
ΒΌ cup chopped fresh green onions (10 g)
Hot sauce to taste
How to make Potato Leek Soup:
Melt the butter over medium heat in a large saucepan. Add chopped shallots and stir until coated in oil.
Cover the pot and reduce the heat, simmer for 10 minutes until the shallots are soft.
Raise the fire to medium. Add garlic, potatoes, salt and pepper. Boil for one minute, then add vegetable broth, water, thyme and bay leaf. Heat the mixture until it boils.
Reduce the heat, cover the pot and simmer for 15 minutes or until the potatoes are soft and can be easily pierced with a fork.
Open the pot and remove the thyme and bay leaf.
Using a stand mixer, beat the soup until smooth.
Add green onions and hot sauce (optional).
Let the soup cool for two minutes, then serve.
