2 tablespoons unsalted butter
1 cup diced onion
1 cup chopped carrots
2 teaspoons kosher salt, divided
1 (28 oz) can of tomatoes
3 cups unsalted chicken broth
How to make creamy tomato soup with just five ingredients:
Add oil to a large saucepan over medium heat. Once butter has melted, add onions, carrots and ½ teaspoon salt. Cook vegetables until slightly tender, 4 to 5 minutes.
Add tomatoes, chicken broth and remaining salt. Heat the mixture until it boils. Cook for 25 minutes or until carrots are very soft and tomatoes are crumbly.
Carefully transfer the mixture to an electric pusher. Knead the soup until it becomes completely homogeneous in consistency. Transfer the mixture back to the saucepan and season the soup to your taste with salt and pepper.
