How to make chicken broth

1 kg chicken cut into 6 pieces
1 onion, cut into strips
6 garlic cloves

½ cup chickpeas, washed and soaked for 15 minutes
2 large potatoes, chopped
1 carrot, cut into 1 cm thick slices
2 cups green beans

Rinse the chicken well and then drain the water.
Heat some oil in a deep saucepan over high heat, add the onion and fry until it turns golden.
Crush the garlic and ginger, then add the mixture to the onion, mix well.
Add the chicken pieces and let them cook in the pan, without stirring, a little on each side until they turn red and the water is completely dry.
Add spices and mix well.
Add the tomato sauce and continue stirring until the mixture is smooth and the color of the mixture changes.
Add chopped chickpeas, hot peppers and lumi, then stir the pot.
Add mashed tomatoes, carrots, boiling water and salt.
Leave the saucepan over medium heat for 15 minutes.

Ingredients for white chicken broth
1 kg chicken cut into 6 pieces
10 chicken wings
1 onion, chopped
5 garlic cloves
10 cups of water
1 medium carrot, chopped
5 thyme sticks
10 sticks of parsley
10 cardamom pods
2 bay leaves
1 cinnamon stick
¼ cup vinegar
1 piece ginger
2 tablespoons salt
How to make white chicken broth
Boil chopped chicken and wings in a deep saucepan with water.
After the water boils, remove the resulting foam.
Add onion, garlic, cardamom, carrot, parsley, thyme, cinnamon, ginger, vinegar, and bay leaf.
Cook the mixture over medium heat for 20 minutes.
Reduce the heat, cover the pot with a lid and continue cooking for 90 minutes.
Once the water has drained, remove the chicken from the broth and let cool.
Remove skin and bones from chicken. Reserve the chicken until you use it in another recipe.
Return the bones to the broth and let the mixture simmer for 60 minutes.
Strain the broth through a sieve and discard the solid ingredients.

Chicken Curry Broth Ingredients
1 kg whole chicken without skin
2 tablespoons vegetable oil
2 medium onions, chopped
3 garlic cloves
2 medium carrots, chopped
2 medium tomatoes, chopped
1 medium potato, chopped
1 tablespoon curry
3 cups of water
2 chicken stock cubes
2 cups frozen peas
1 tablespoon cornmeal
1 pinch black pepper
How to make Chicken Curry Broth
Heat oil in a deep saucepan.
Add chopped chicken, cook until golden brown.
Remove chicken from pot and set aside.
Add the onion to the pan and fry until it turns golden.
Return chicken to pot with garlic, carrots, potatoes, tomatoes, curry, water, and bouillon cubes.
Once the mixture comes to a boil, cover the pot with a lid and let it simmer for 20 minutes.
Add the cornmeal and stir constantly, then add the peas and keep stirring.
Let the mixture simmer on low heat for 3-5 minutes.
Season the broth with black pepper and serve.
